Cream soup from the Hokkaido pumpkin

with own oil and seeds

Main:

Ragout from local red deer in juniper sauce,

Red cabbage strudel and napkin dumplings, with red wine pear and cranberries

Or:

Souffled salmon fillet on steamed pointed cabbage

and potato snow

Vegetarian option:

Savoy cabbage on onion melt and Risoleé potatoes

Desert:

Home-baked apple tart with creamy vanilla ice cream
